Pre-heat the oven to 180°C and line two trays with baking paper
Stir both the flax seed and water together in a bowl, then let it sit for at least 5 minutes, just to thicken (this will act as your egg to bind the ingredients together)
Put the avocado oil, honey, vanilla, and ginger into a food processor and process until light and fluffy. Add in the flaxseed mixture and process again
Tip the mixture out into a bowl and add in the flour, baking powder, and the chopped up dark chocolate
Mix until just combined then roll into balls, arrange on the baking trays and press lightly to squash a little
Bake for 12-15 minutes or until golden brown and cooked through
