Begin by toasting the sesame seeds in a large non-stick pan over a medium heat for five minutes, until they've turned golden. Add to a small bowl and place to the side
In a separate bowl, add the manuka honey, tahini and a teaspoon of water. Stir to form a thick paste
Add the ground almonds, protein powder and sea salt to the honey mixture. Using your hands, mix both to form a dough (if the mixture is too thick, add some more water to loosen)
Break the dough into small balls and roll to cover in the toasted sesame seeds
Pop the snack balls in the fridge for 10 minutes to firm before enjoying! Store in an airtight container in the fridge for three to five days
