There is nothing better than a hearty bowl of Bolognese, and this recipe is no different! Cook a large bowl ahead of time and enjoy throughout the week.
Ingredients
4 small or 2 large sweet potatoes
1 tbsp vegetable oil
1 pack vegetarian Bolognese ragu
A handful of kale, stalks trimmed and torn into bitesize pieces
Toss the sweet potatoes in the oil and add to the heated oven for 25-40 minutes, until the skin is crispy and the inside soft. Meanwhile put the ragu into a pan and when the sweet potato is 5 min away put onto a medium heat.
