Preheat the oven to 160c
Line a baking tray with greaseproof paper and lightly brush with olive oil
Pour the boiling water over the chia seeds and omega 3 mix, then stir in the olive oil for a few minutes - allowing the chia seeds to absorb the water
Once the chia seeds have absorbed the water, add the remaining ingredients and mix well
Pour the seed mix onto the lined baking tray and spread it as thin as you can, smoothing out any gaps
Put into the warm oven and bake for 45 mins. Remove and allow to cool
Once cooled, break into shards and serve
