A delicious and hearty curry made with pinto beans. These beans are not only tasty but full of calcium.
Method
- Boil the soaked pinto beans for 1 hour.
- Sautee onion and garlic in coconut oil until onion becomes clear, approximately 10 minutes.
- Add chopped tomatoes, beans, spices and water. Leave to simmer for 20 minutes on low medium heat.
- Before serving, add spinach leaves and heat for 5 minutes until leaves have wilted.
