Some may say better than the real thing, this vegan sandwich is a great go to on days that you want something fancy, but can't be bothered with the clean up!
Heat the oil in a heavy based pan, add the chopped pepper and sliced onion, and fry until soft and golden.

Add the white wine vinegar and cook, stirring intermittently, until most of the liquid has been absorbed or evaporated.

Slice the tofu lengthways into strips, and then cut the strips in half, for pieces around an inch long.

In a separate pan, place one half of the tofu strips in a pile equivalent to the length of your roll, fry for 3 minutes, and then cover with half of the onion and pepper mixture, as well as half of the cheese.

Leave to cook on a medium heat for 5 minutes, or until the cheese has melted.

Halve one of your baguettes and spread with mayonnaise, then carefully add the mixture.

Repeat process for second sandwich (or more if you’re feeding a crowd!)
